Jackfruit ice-cream with millet extracts – a big success at Agri Intex

Jackfruit flavoured ice-cream with millet extracts turned out to be an instant big hit at AGRI INTEX 2018, conducted from 13th – 16th July 2018, at CODISSIA Trade Fair Complex, Coimbatore..

The four-day expo,has always been a crowd-puller. But this time the event saw every passer-by waiting in queue to buy a cup of the delicacy before asking for more.


The delicacy was developed by the students of Food and Dairy Technology, Tamil Nadu Veterinary and Animal Sciences University (TANUVAS), and was prepared and marketed by members of Cuddalore District Value-added Food Producers’ Society.


With rigorous four month training on the use of millet extract for making of ice-cream, PP Manimozhi, a member of the Society said, “The town Panrutti is known for jackfruits. We decided to use the jackfruit pulp (not essence) in the making of the ice-cream and Agri-Intex as the launch pad for commercializing the product. The response has been overwhelming.”


  1. Bhaskaran, Dean, TANUVAS, said the institute developed such technologies for incorporation by farmers under the Healthy India project.


It is a five-year project (2016-21) at an outlay of Rs.275.60 lakh from the Department of Science and Technology – National Science and Technology Entrepreneurship Development Board.


“Our students conducted research to reduce the fat content in ice-cream and harped on the idea of using millet extract. We impart training to interested farmers/entrepreneurs as well,” he added.


The institute has introduced milk-protein enriched noodles for children, refined wheat-flour noodles and fibre-enriched noodles.


“It took us close to eight years to develop noodles,” said A Karthiayani, an assistant professor.

Bhaskaran said Omega 3 enriched chocolate and more are to follow the series.
