Bühler Expands Nut Processing Capabilities with NapaRoast Pasteurization Technology

Global food technology leader Bühler has strengthened its position in the nut processing sector with the integration of NapaRoast’s cutting-edge steam-vacuum pasteurisation technology into its product portfolio. The move aligns with rising consumer demand for safe, healthy, and sustainable snack options, while also addressing stricter global food safety regulations.

The NapaRoast pasteurisation process offers a pathogen reduction of over 5 log in nuts, seeds, and other low-moisture foods. By using saturated steam under partial vacuum, the technology ensures thorough microbial decontamination at lower temperatures without compromising the texture, flavor, or nutritional profile of the products. Unlike traditional systems, this process eliminates the need for a drying step, improving energy efficiency and product quality.

Nuts, recognized for their high protein, fiber, and antioxidant content, are enjoying increasing popularity as health-focused consumers drive global market growth of up to 7% annually. This surge is accompanied by heightened scrutiny of food safety and contamination risks—particularly in low-moisture foods like nuts and seeds, where pathogens can be especially difficult to eliminate.

The NapaRoast system is already in use at over 40 facilities worldwide, offering throughputs from 1 to 6 tonnes per hour. Designed to minimize waste and downtime, it accommodates a wide range of formats—from whole nuts to chopped pieces and powders—without causing breakage or dust.

To demonstrate the technology in action, Bühler has upgraded its Flavor Creation Research and Training Center in Uzwil, Switzerland. The new facility will provide customers with hands-on testing and training opportunities, including an exclusive launch event on November 4–5, 2025.
