Godrej Vikhroli Cucina unveiled the eighth edition of the Godrej Food Trends Report 2025 with an innovative food theatre performance titled Feast for the Future. Departing from conventional presentations, this year’s report was revealed through storytelling, satire, and sensory drama, celebrating food as a reflection of memory, identity, and emotion.
Drawing insights from over 190 culinary experts—including chefs, nutritionists, mixologists, and entrepreneurs—the report emphasizes the resurgence of seasonality and culturally rooted ingredients, with 82% of contributors noting a consumer shift towards local, seasonal produce. This trend is shaping dining experiences from home kitchens to fine dining, signalling a return to intuitive, place-based eating.
Tanya Dubash, Executive Director and Chief Brand Officer at Godrej Industries, highlighted the report’s evolution since 2018, emphasizing food as culture and possibility. This year’s theme reflects a global embrace of authenticity and sustainability, with seasonal eating making a significant comeback.
Key highlights include a predicted rise in immersive, multi-course tasting menus (74%), the everyday gourmet status of frozen snacks like momos and kebabs (66%), and the growing popularity of Himalayan cuisines for their clean-label and sustainable appeal (85%). Heritage alcohols such as feni and mahua are expected to see increasing demand (78%), while Goa was voted India’s top food destination (89%) for its rich culinary diversity.
The launch event showcased partnerships with brands like Crazy Cock Single Malt Whisky, Six Brothers Mahura, Simba Beer, and Sula Wines, reinforcing the report’s cultural and sensory themes.
Abhay Parnerkar, CEO of Godrej Foods Limited, emphasized the company’s commitment to innovation rooted in India’s culinary heritage, while Creamline Dairy’s CEO Bhupendra Suri spoke about dairy’s central role in tradition and mindful consumption.
Curating Editor Rushina Munshaw Ghildiyal reflected on the deep connection between food, culture, and climate cycles, inspiring the report’s seasonal focus. Celebrity chef Amrita Raichand praised the theatrical presentation for making the trends tangible and emotionally resonant.
