Apsara Ice Creams continues to attract attention for its traditional hand-churned ice creams made with fresh buffalo milk, real fruits and no preservatives. The Mumbai-based brand offers more than 50 varieties, combining classic Indian flavours with experimental creations.

The brand’s ice creams are made with thick, creamy buffalo milk, which is slowly boiled to concentrate its richness naturally. The milk is then homogenised to evenly distribute fat particles, helping create a smooth and creamy texture. Once cooled, ingredients such as fresh fruits, dry fruits, chocolate, sugar and flavouring components are added according to each recipe.

The mixture is then churned in freezers with controlled air incorporation, giving the ice cream a dense yet smooth mouthfeel. After churning, it is moved to a hardening room and cooled at very low temperatures, helping reduce ice crystal formation and improve texture.

Apsara is especially known for using real ingredients instead of artificial shortcuts. Its mango ice cream, for instance, is made using fresh Alphonso mangoes sourced from Ratnagiri farms. Apart from popular flavours such as roasted almond, guava chilli and crunchy chikki, the brand has also introduced unusual creations like pani puri ice cream.

The pani puri flavour is made without milk and includes mint, coriander, chaat masala and other pani puri ingredients. It is finished with the brand’s special homemade masala, giving it a spicy, tangy and sweet profile.
