Swiss chocolate manufacturer Stella Bernrain has introduced a new Matcha Strawberry Ube chocolate bar, combining three distinctive flavours in a colourful, snack-sized format. Launched on October 1, 2026, the product reflects the growing popularity of Asian-inspired ingredients in the global confectionery market.
The new bar combines the slightly bitter taste of Japanese matcha green tea, the fruity sweetness of strawberry and the mild, creamy flavour of ube, a purple yam widely used in Southeast Asian desserts. The combination creates a striking contrast of green and purple layers, giving the chocolate a distinctive appearance alongside its unusual flavour profile.
Ube has gained international attention through social media, particularly in desserts, beverages and bakery products. Stella is now bringing this ingredient into Swiss chocolate, offering consumers a new experience that combines familiar fruit flavours with emerging international tastes.
The 31g bar is made with organic white chocolate containing a minimum of 36% cocoa butter and cocoa solids as declared for white chocolate. Its formulation includes 2.6% ube powder, 2% strawberries and 1.3% matcha. The product is certified organic and Fairtrade, gluten-free, and contains no soy or lecithin. It is also presented in paper-based packaging, reflecting the company’s focus on more sustainable packaging solutions.
Robin Auer, Head of Marketing and Sales Brand DACH at Stella Bernrain, said the launch brings emerging global flavour trends into Swiss chocolate while maintaining the company’s commitment to organic ingredients and Fairtrade standards. The company expects the combination of unusual flavours and attractive colours to appeal to consumers interested in trying new confectionery products.
Alongside Matcha Strawberry Ube, Stella has expanded its Organic & Fair range with two additional products. The new Milk Pistachio bar combines creamy Swiss milk chocolate with real pistachios, sea salt and vanilla. The second product, Surprise Mix, takes a different approach by using surplus chocolate and ingredients from the company’s own manufacturing operations to create new chocolate combinations. Because the ingredients vary between production batches, each Surprise Mix bar can offer a slightly different taste.
The Surprise Mix initiative also addresses food waste by finding a productive use for suitable surplus materials that might otherwise remain unused. Both new offerings reflect Stella’s efforts to introduce fresh product ideas while considering responsible production practices.
With these introductions, Stella is combining adventurous flavours, organic sourcing and resource-conscious manufacturing to broaden its chocolate portfolio. The launch also illustrates how confectionery manufacturers are exploring globally popular ingredients and distinctive product appearances to attract consumers seeking something different from conventional chocolate bars.
